The Castle’s Kitchen
The culinary culture of Salento blends with that of the peoples who have passed through the region, giving rise to unique flavours to be savoured ‘among the clouds’.
Our cuisine is born from special ingredients: stories, journeys, invasions, cultural fusions, marriages and separations. The castle, originally built as a fortress, has always embraced diversity; within these walls, distant peoples have met, noble families have been reunited, and generations of Salentini have shared their daily lives as if in a large, precious communal residence.
Today, the castle is the Castello Volante: an exhibition space, an event venue, a bar and a restaurant. A cultural hub woven from stories that we have chosen to recount through our cuisine as well; by serving you ‘ciceri e tria’, we commemorate the Turkish invasion; our ‘frise’ recount the adventures of Aeneas; our ‘orecchiette’ evoke the Norman-Swabian rule; and our octopus tells the story of the Messapians.
We have chosen to pay particular attention to our selection of wines – which are, in their own right, worthy storytellers – and we’ll be delighted to recommend them to you.
